Bread recipe is basically an extended version of Mark Bittman No Knead Whole Wheat Bread. I no longer really stress about exact timing or amounts. It's always good enough to eat and enjoy. The following yields a bread loaf like you tried. i often 2-3X and the bake takes like 50% longer

NOTES.
My sourdough starter lives in the fridge and is 50/50 water flour. I bake once a week, occasionally twice.
It's a wet dough but there should never be water left over in the bottom of the container during any step - that would mean too much.

DOUGH.
Mix 100g each flour/starter/warm water
Feed starter 50g water 50g flour
Let both sit room temp 6-8 hours

Starter in fridge till next week
Mix in 200g flour, 110g warm water
Knead thoroughly
24 hours in fridge (yeast works through)

Dissolve 7g salt in 50g ish warm water
Mix in. Knead thoroughly
24 hours fridge (yeast creates sour)

FOLD.
This process takes between 1-4 hours depending how much folding you want to do and how forgetful you are. All folds are optional but develop the strength of the dough. I usually do 3-4. I often let it rest 'too long' between because I forget about the dough while I do other things. Whatever, it'll be fine just a little different

The fold process is one I'd never seen before. On a lightly watered surface just flatten the dough out 1/2 inch thick in a big rectangle and tri-fold it twice so it makes a square ish round. Then back in container to rest. Timing:

Dough out of fridge for an hour (but it'll be fine if you fold right away, as long as it has time to come to room temp before the bake)
Fold then rest 20ish min 4x
Last fold rests in dutch oven with parchment paper to hold shape
Dust flour on top, deep slashes

BAKE.
Put cold dutch oven into cold oven
30 min 485 degrees
10 min lid off
15-30 min 400 degrees
Done when internal temp 205-210
Let bread cool on rack
I usually cool the oven a little and let it rest in there for some extra bake. The one you tried was straight out of the oven and cooled on my bus ride to work ha
